How to create special add/subtract formulas?

I have a quantities sheet. where I receive new inventory, shift from one department to another, and ship out. I currently have columns with the quantities of each location and would like to be able to create a series of formulas that allow me to enter a number of quantity delivered or shipped each day in a separate cell,  and have that number added or subtracted from my official quantity automatically. I do not know how to set this up, as I only want to have to enter the new daily delta in a cell, not continually add to a large number. How could I make the cell send the command to alter the quantities, have them set as the new values, then clear itself and ready for the next input?

You could format deliveries and receipts of products in a table and calculate the total quantity of items on hand based on your deliveries/receipts. Take for example the attached workbook.
