help creating a Formula

I need help creating a formula for tracking Sick hours and Vacation i have  =Countif(Range,"S") - S for Sick, i need the value of S to Equal 7 and to go in the Total for Sick as well i need one for Vacation. i need to be able to show the difference between sick and Vacation as well if it is not a full day say 5 hours. any one able to help create this for me.
