Excel Spreadsheet Extract Data

I have created a basic spreadsheet to track symptoms of a very rare neurological disorder from day to day. I used conditional formatting to flag certain conditions and a simple "x" in the box to mark foods consumed on a daily basis. For this to be effective, I need to maintain a new spreadsheet every day, and on days that get flagged based on symptoms, access marked data from the two previous days to look for any consistencies. Question is, how do I maintain these daily records without creating 365 tabs in my spreadsheet? Any best practices I can or should consider? Thanks

Why not you keep them all in one table in one sheet?

Instead of making a sheet for each day, make a sheet for each year.

You can reference the day in the table by adding a column for it in the table.
