I am wondering if it is at all possible to link a specific email in outlook to a data field / cell in excel.
Trying to build a spreadsheet with info on it and I want to be able to have an easy way to refer / link back to the email that provided the info in the first place.

Yes, use Power Query.
Data menu, Get Data, from Other Sources , MS Exchange
In the Power Query editor you can filter to remove the messages you don't need. You can remove non-essential columns, too. Depending on the fields needed, you may have expand a few structured columns. Load to sheet when done.
