Looks like the Excel table naming convention for dependent data validation, requires the table name to not have any spaces and the only special characters allowed are underscore _ and the period. Is this correct?

Broadly, what you say about the naming convention for defined names is correct, but don't forget that what you think of as a letter or the alphabet and what the average Greek may consider to be a letter might differ. In practice, many Unicode characters also work within names.
Thus, should you choose, you could name a Table or a formula
←Λ³∕
and it will work.
Note: The ∕ is fraction separator, not the ASCII slash operator.
