I only have two data types and I need to add more for a class. I have office 365 and only have stocks and geography. I have no idea where to find more. Youtube and google have come up dry.

It depends on subscription. For Organization data types you need to be on E3/E5. Wolfram data types are for consumer subscriptions, not sure which channels.
