I used to customize keyboard shortcuts in both Word and Excel the same way. Now Excel no longer has the option in the Excel Options/Customize Ribbon. Is Macros the only way now?

Are you sure? They never been customizable in Excel, at least from the box. Unable to customize keyboard shortcuts in excel 365 - Microsoft Community Hub
