Problem: the usual data format "dd/mm/yyyy" is absent and existing dates are replaced by "dd mm yyyy". How do I create/import/set the conventional format?

Excel uses the date format set in Windows, in Start > Settings > Region or Control Panel > Region. Has dd mm yyyy been specified there?
Anyway, you can always select Custom in the Number tab of the Format Cells dialog, and enter dd/mm/yyyy in the Type box.
