Collaborating in Excel

We are considering using an Excel - file as a sign-in sheet for certain activities at our school. For this all our students will be granted access to the file, so they can sign up for certain things. However, this would only work for us, if, once having written something, the student (and others) could not change their/someone else‘s entry. Is such a collaborative mode possible?

I think Excel is not the tool you should use for the scenario described. What about using a Microsoft Lists List where you have configure each user can only modify his/her items?

Thanks for the advice! Is it also possible to set the entries as read-only once something has been typed; also for the students who added the info? In other words we would like to avoid students who have signed up for something to be able to change their minds afterwards.
