Building an excel sheet

I hate excel and no matter how much training I do, it just doesn't click for me. So I need some help/advice on what would be the best way to create the spreadsheet that would best work for me. I have attached a report I pull from our operating system. I need this report in a work book for the entire year broken down by month. Starting in the month of July and ending in June. If someone could help

You shouldn't hate Excel but probably the people who send you one month of data in a pdf and expect you to generate a full year of data from this.

It's not the best option for sure but it's what I have to work with.

Do you have the pdf's for the previous year? 2020 from may to dec, and 2021 from jan to april?

I don't, this is a new computer program we are using and I really just need it for keeping track of the taxes in each category. I have the last column blocked out but it's basically the price per gallon.
