Like I use to do when I create Dashboard is distribute the data in multiple sheets and link them to one single main sheet. From there I devise formulas to match the data, not by actually linking/referencing them to the main sheets. Formulas filters and sorts as per my own requirement in the main sheet when the charts/dashboard is. The final thing I do is to select the current sheet data range and in Format Cell tab under the Protection I select both hidden and locked. And before closing I protect the sheet with a password. When to show to somebody do not un-protect the file.
