Bizarre Bug, replacing a hyphen with nothing using Find and Replace replaces hyphen with apostrophe

Very confusing issue, when I use find and replace - with nothing (to delete all the hyphens in my document) instead of doing so it leaves an apostrophe which is visible from the formula bar but not on the document. When trying to delete the apostrophes using Find and Replace it says none are found so they have to be deleted manually defeating the purpose of the replace function.

 

Anyone else have this issue?

An apostrophe ' as prefix specifies that the following value is to be treated as text, even if the value looks like a number or date.

It does no harm - the apostrophe will not be printed.
