The background of Excel cells is white by default and there is no way to set Excel to a different cell background color. You can work around this by using a fill color and then set printing to be in black and white. But that will disallow you to print in color obviously.
Alternatively you could set Windows in high contrast mode, but that will affect all of Windows obviously.
