Automatic open sheets

I have noticed that when Word is closed and when I open it again - several of my documents reopens.

Is this possible with Excel as well?

Yes - Excel has a startup folder. Its default location under Windows is %appdata%\Microsoft\Excel\XLSTART

If you prefer to use another folder, you can specify it in File > Options > Advanced, section General.

Enter the folder path in the box labeled 'At startup, open all files in', then click OK.

Copy or move the workbooks that you want to open automatically each time you start Excel into XLSTART or your alternative startup folder.

So in order to have certain Excel workbooks opened automativally when Excel is opened, I have to move the workbooks?
For Word I have never done this - they just reopens automatically.

I'm afraid I don't know why Word reopens documents automatically unless you save to Word's Startup folder by default.
