Add a sheet view

i want to access sheet view setting View > Sheet View > New

but this option is not apear in view section never on office 365

i search to much about this

It's available for Office 365 subscribers on Excel Online and Insiders channel on Excel Windows desktop, don't know about Excel for Mac and other versions. And only if file is saved on Sharepoint or OneDrive.

yes i have office 365 subs

and i have many device to work with

this i cant access why ?

Again, Office365 subscribers could be on different channels. Production ones as here https://docs.microsoft.com/en-us/deployoffice/overview-update-channels and Insiders channels https://insider.office.com/ Right now Sheet View is available only for the latest ones.
