The sound volume settings in the windows volume mixer are not saved for edge only. If I understand correctly, the volume mixer settings are stored here [HKEY_CURRENT_USER\SOFTWARE\Microsoft\Internet Explorer\LowRegistry\Audio\PolicyConfig\PropertyStore\].
I tried to set Edge to different branches (stable, dev, can) but more than one version did not create any keys in the registry to adjust the volume. The volume settings are constantly reset to 100% after restarting the browser or if the browser has closed the tab from where the sound was.

This is important feedback, I'd also send it using the feedback button on top of the browser to Edge support
