I know there are reasons why search engines are automatically added to the list, but I wish I could have total control over it and prevent search engines from being added automatically. 'My' browser, my rules... lol...

While presently there is no means to limit the search engines installed other than limiting the pages you visit. You can remove them as needed from the Settings page. I can relay your concerns to the product team for consideration for future updates.

You can use the extension Don't Add Custom Search Engines.
