Since the official release of the Edge Chromunim will be January 15, 2020, will the beta versions be closed? Does it matter what version of Windows I have to get the new Edge? Does this also means that the current Edge on Windows computer will be replaced with the new update?

Hi,
Beta/Dev/Canary channels are not going anywhere, they will stay and will be used by Microsoft to continue the development of the Edge browser. just like Google uses Beta/Dev/Canary channels to develop their Chrome browser.

Also about how you get the stable version of Edge on Windows:

Microsoft will be pushing out the new Edge via Windows Update to the majority of Windows 10 users
https://techcommunity.microsoft.com/t5/Discussions/Microsoft-will-be-pushing-out-the-new-Edge-via-Wi...

"Windows 10 RS4 and newer" will receive it automatically
RS4 (Redstone 4) - released April 2018 - Build 17134.1

to know about the details of replacement, please read this article:
