I'm not sure, if this is the correct place for this, but I didn't know any better.
The download button on the official Edge Website https://www.microsoft.com/edge is missing.
Instead, there only appears to be a "Try now" button, which launches a "microsoft-edge://" URL.
Of course, this works fine on new Windows 10 devices, which already got the new Edge installed via Windows Update. However, this does not work on devices running Windows Server, as there is no application available to open the "microsoft-edge://" Link.
Edge "download"-page opened in Firefox 81.0.1 running on Windows Server 2019:
I am guessing that this is based on the user-agent, as opening the page from the new Edge still shows a download button.

Solution
Well the answer is, you don't see Windows server on this list, because it's for regular consumers, not businesses.
in Microsoft.com/Edge
you can click on "For business" at the top, then click on "deploy today" and you will be taken to this page:
Download Microsoft Edge for Business - Microsoft
try that.
Also you can find Windows server installers from here:

That makes sense, thanks for clarifying.
I was just wondering, since you can run the "consumer" installer on Windows Server just fine, and since the button still was a "download" button a while ago.
Thanks again for the quick response 🙂
