How To Evaluate Copilot (6 months)

I have a client who recently purchased 500+ seats and are trialing Copilot for Microsoft 365 for the next 6 months. I would love some guidance in two main areas:

1. Are there resources available on evaluation forms that they can use throughout the next 6 months to identify whether or not it is worth the investment?

2. In addition, I noticed the analytics reporting capabilities for "Copilot in Dynamics 365 Customer Service" offers some interesting metrics such as:
- "The number of times that text from a copilot response was copied"

- Satisfaction of the user with the tool
Are these available to be accessed when assessing the benefit from Copilot?
