Excel does not accept (user defined) formats and from time to time resets formats to default

Hello to all, just joined this forum.

My problem is with formatting cells. One strange thing is, that my Excel 2010/Windows 10 (but it happend in other Environments, too) does not accept formatting or resets formatting from time to time. It's that much work, do change it back every while, I would immediatley try to get rid of it if theres was only one comparable alternativ.

I have, for example a cell containing date and time formatted as "hh:mm" but Excel insists in showing "TT.MM hh:mm" or something similar. See attached file.

What I'm doing wrong?
