Touch mode and external displays the same time

Hello, is it possible to use a Surface Pro device in "touch mode / pen mode" and with two external displays via dock the same time. I want to use the Surface Pro device for hand written notes with the pen and the displays. Kind regards.

I'm not certain about the 3rd display, but I use my SP with one external display connected via dock. I set the Projection Mode to "Duplicate display," then use my pen on the SP and see it on the external display. This works especially well when I'm using Adobe Illustrator.

Is this what you have in mind?
