Remove people from a channel

We recently created our first team in MS Teams. I then added a few channels (one for each of various projects people are working on). Unfortunately Teams, in its wisdom, subscribed every member of the team to the 1st four channels created. That really sucks in my opinion, especially now that we have everyone receiving notifications for @channel messages that a) they're not interested in and b) the sender doesn't want them to be notified for.

 

I've asked people to unsubscribe themselves from these 4 channels but it's not happening. So I want to remove them from the channels myself and just leave the people on each channel who actually have an interest in it. How can I do that?

The way to go is the one you have just described: the user should remove from favorites the channel. AFAIK, there is not a way to manage this using Teams UI (Not tried PowerShell possibilities)
You used to be able to see who had a channel favorited but it just randomly disappeared from teams. Current state you have no control over who favorites channels. It’s really up to the user to see what they want and don’t want. Who cares if they get the notifications that’s on them :p. If you don’t use all team mention then they don’t have an excuse.
