@Nilay Dhamecha following a channel is like a subscription to all activity in a channel. New channels cannot be followed automatically.
As for e-mail, Teams only will e-mail you if you are away at the time of the activity that triggers one of your alerts. If you follow a channel and you are signed out, then you will get an e-mail based on the frequency you have it set to. If you are actively using Teams, and or using it and step away a minute before it goes to away status, you will not get an e-mail for actions that occur during that window of time.
The only thing you can do with new channels is set the channel to Show for everyone when it's created. With a channel that is shown, you can utilize channel mentions which will notify everyone in the channel.
