I have been trying to find legacy specs for using SFB or Lync s a voice solution.. I understand the setup for SFB may have been quite intensive but I am looking to compare what is needed now to what was previously needed...

It’s a tricky question! Are you implying to on premises s4b /lync solutions with Skype for Business Online / Teams? Also what is required very much depends on how your setup will be and if you want to integrate to existing systems! What has changed a lot is that MS supplies cloud only solution including numbers and so on! This is called “Microsoft phone system” ( please check availability in your region) This can also be integrated into existing solutions which in this case gets more complex! With Teams, you'll ultimately need to make the decision at whether you want to go with Phone System over the Microsoft network or whether you want to use Direct Routing with a Session Border controller. The below articles should take you through all this, SKU's to add, how to deploy it, network considerations, phones and peripherals, etc.
If you get Microsoft to provide your calling plans then it's really simple to get new numbers in the UK and assign them to people. If you want to port your existing numbers in then that's doable, but takes a while through OFCOM's process.
If you want to keep sourcing your numbers through a third party you need to install a device called a SBC to route calls up to the cloud, I would say that's fairly complicated to set up, but it's much less complicated than it used to be with SfB.
