how can I have values in tons, € etc. at the same time with %-figures on the pivot table?

Drag the field which you want to display in different representations (Euro, %) onto the sum area of the pivot table multiple times and format (or change the type of calculation of) each one the way you need it. To get a different unit of measure you can use a calculated field in which you multiply the original field by its unit-conversion multiplier.
