Is there somewhere in the browser where I can see what this information is? and delete only some of them and not all?
If not, do you think it would be interesting for the browser to offer this feature?

all the info that are going to be deleted can be individually viewed and deleted from here:
Go to the settings by clicking on the (ellipsis) menu button at top-right corner of the browser,
edge://settings/profiles
