Sharepoint List - Person or Group Type

Thanks for reviewing this, I've found an odd solution by accident, for some reason the issue has nothing to do with SharePoint but the notebook I was using, I've opened the list on my personal notebook at home and re-entered the names and they stay in the order I enter them, I go back to my work notebook and if I enter a new name, it sorts alphabetically, same browser on both notebooks so odd, but at least I have a solution.
I just tested this as as mentioned by the other reply, the selections stayed in the order as selected, they did not get sorted A-Z on save.
Maybe create a Dev tenant or even a new site collection to see if you can replicate this "normal" behaviour and then go to Microsoft support and ask what is the difference.
