I assume you are using the list in classic mode, don't you? If so, the changes you are seeing could be related to the modernization process Microsoft is doing with lists and document libraries
Does that mean that basic functionality like using multiple filters is gone?? What are we supposed to now, especially when Modern Lists are not 'fully baked' yet? (certainly still missing some of simplicity and intuitiveness)

No, still back and forth with Microsoft Support. The issue is reproducible, but they claim we're the only ones having it....
