auth1375 I ended up going down a rabbit hole on my device, I found that turning Google's pixel-built-in VPN off worked for me. See if you have any VPNs on and turn it off if so. My issue was stupid, Microsoft support couldn't help me with my issue, and the MS Defender app's VPN doesn't interrupt Copilot services while Google's does. Hope this helps.
tbritcliffe you are the best. Also have a Pixel 8 and after turning off the built in vpn everything works fine. Youre the best.
