Editing virtual meetings?

We are looking at Bookings as a solution for virtual workshop registrations. We think it will be a great fit except for one thing that we can't figure out: breakout rooms. Our team creates/schedules the workshops in advance, but they are facilitated by others. In keeping with the limitations that Teams/Breakout rooms have, we have to be able to edit the meetings after creation within the Teams environment to pre-create the breakout rooms and assign breakout room managers since the organizer is not present in the meeting. Is this possible with the bookings meeting?
