Bookings not honoring existing "busy" time in staff member's Outlook calendar

I've been looking at this today and have the exact same issue. At first I was just using personal bookings, but the emails that sends are missing a company logo at the top, they just say 'Image' and I've no idea where its trying to pull this from.. but its not working...
So, I moved onto creating a proper booking page with the additional configurations this provides. I added only 1 member of staff and ensured the option was enabled to honour their personal calendar, however nothing seems to work with regards to that being honoured. Anyone can double book with a meeting link (and they're not multi-day services...)
I'm finding this very frustrating
