Bookings Cap - No time Limits

Afternoon,

We have a project where need each employee to pick up some new equipment, however as we are limited in stock we want to spread this out through Booking. Rather than the customer booking a specific time, is there a way to set up an all day booking etc but just limit the total number of bookings to say 50. And then if we need to change the amount of bookings drop this down at a later date if stock becomes low?
