Intune Auto Upadte policy and Manually Updating Office 365 roles back to older version

Manually updating by clicking on Microsoft 365 and Office updates roles back to older version 2309.

We have Intune Microsoft 365 Apps for Windows 10 and later setup, which should upgrade to the latest (I would think?) version you do not see the latest version instead you see one version behind. 

Should this be changed from "Monthly Enterprise Channel" to "Current Channel". What if we seem to have issues with the latest updates. Some of our IT Executives are doing a manual update, thinking that by manually updating it would fix their issues what they are seeing with Co-Pilot etc.. when using Office 365. I am not sure how this is being rolled back to 2309 from the current version.
