Remove Date data from date time field
How do you remove date data from a date/time field so that all you have is the time data?

To go from 3/25/25 7:00 pm to 7:00 pm you can use the same trick as explained above, provided that the first part is a real date, and format the cell with the result as time If it's a text it will not work. The picture below demonstrates the 2nd part of your question.

3/25/25 7:00 pm ==> 7:00 pmto allow me to subtract 7:00 pm - 6:00 pm ==> 1
= (7:00 pm - 6:00 pm)*24 with applying number format
