Capture Teams chat and feed to Cognitive Services

I need to capture all Teams chat within my organization, and feed the results to cognitive services, to identify frequently asked questions. Goal is to eventually construct a knowledge base, based on the results.

Need advice, end to end, how I can achieve this. What services do I need to look into?
