Unfortunately, Pivot Tables were deprecated from Access after the 2010 version. It's not likely they'll be restored in future versions.
However, you can make your interest known by making a suggestion at The Access Feedback Portal.https://feedbackportal.microsoft.com/feedback/forum/818e3b49-e61b-ec11-b6e7-0022481f8472
If it garners sufficient interest, perhaps Microsoft would revisit the decision to drop them.
